Cheese processing follows old, repetitive manners that have been passed down through generations to preserve the tastes of "once ago".
As for the shape, we like to put our cheeses in baskets (this is why they are called "canestrati", from "canestro" which means basket) and they can be of various types: from fresh cheese which is ivory white, with soft, sweet dough, not very salted, ideal to be eaten fresh or to go with appetizers to seasoned cheese which is golden yellow, with hard dough and an intense or hot taste, according to its seasoning, ideal as a second course or to be grated.
